Vegan Orange Bundt / Gâteau bundt végane à l'orange

Vegan Orange Bundt


So, here is my favorite cake recipe... of all times. It doesn't have the best texture in the world, but the taste and moisture are amazing... I adapted it from this recipe (but mine is simpler!).

Ingredients


1 1/2 cups whole wheat pastry flour (or all purpose flour or sifted whole wheat flour)
1 1/2 cups all purpose flour
2 tsp baking soda
1 tsp salt
1/2 tsp baking powder
1 1/4 cup coconut sugar (or regular sugar)
2/3 cup vegetable oil (melted coconut oil or canola oil are fine; but let's face it, coconut oil tastes just so much better)
1 cup non dairy milk
2 tbsp apple cider vinegar
2 tsp vanilla extract
2 oranges
chocolate chips to taste (optional)

Instructions


1- Preheat oven to 350F.
2- Oil evenly your bundt pan (I usually spread coconut oil around with my fingers) and flour it. If you used coconut oil, stick the oiled and floured pan in the fridge so the oil does not melt while you prepare the rest.
3- In a bowl, mix the flours, the baking soda, the salt, the baking powder, and the sugar.
4- In your blender, measure the milk and the oil (no need for cups - most blenders have measurements on the side), and then add the vinegar and the vanilla. Do not blend yet.
5- Wash your oranges and grate them over your blender. I usually just peel them while being careful not to include too much of the white stuff (which is bitter). Then, throw away all the white stuff from your oranges and add the oranges pieces to your blender. Follow me? At this point, you should have orange peel, orange pieces, and a mix of milk/vanilla/vinegar/oil in your blender.
6- Blend until smooth.
7- Mix the dry and the wet ingredients. Fold in chocolate chips at the end if using.
8- Bake 45 to 55 minutes, testing with a skewer (or a chopstick if that what you've got!) for doneness.
9- Eat and eat and eat and eat...

Recipe Notes

If you use whole wheat flour that you just sift, you might have to add a little bit of liquid; the texture of the batter should be just a little more dense that a usual cake batter.

As always, DO NOT overmix. The gluten will be sad, and you will end up with a bready cake.
